It has been detected in small quantities in starchy foods such as potato chips as a result of high temperature-based cooking methods that catalyze a specialized chemical reaction between amino acids and sugars.
The pioneering research empowered by ARYC technology enabled the Ohio State and Spanish science teams to apply a technique known as mid-infrared microspectroscopy (IRMS) to develop a simple, rapid and high-throughput screening tool to detect acrylamide in potato chips. The Arrayit empowered discovery is helping to set a new standard for addressing risk management, food safety and brand equity, which are key benchmarks in the food industry.
